Tostadas de Ceviche de Coliflor

14690838_10210644754337478_2565065120778095530_nThe absolute best and easiest way to satisfy your ceviche cravings. We combined my bestie’s frijoles fritos with my ceviche and created magic. Yeah, when something is this good it tastes magical. Also, because our kids love being in the kitchen with us, they did most of the work (see that’s magic). Us Mamas just directed and drank Coronas. Winning!

Ceviche de Coliflor

1 head of cauliflower finely chopped

1 thinly sliced white onions

Finely chopped cilantro

Deseeded chopped tomatoes

1 large peeled and diced cucumber

1 large avocado medium ripe and cubed

Splash of Apple Cider Vinegar

Juice of 3-4 limes

Salt to taste.

Add all ingredients together and let sit in acids for about an hour before serving.

Suzette’s Frijoles Fritos

Rinse frijoles in water.

Add water, salt and 2 cloves of garlic to a large pot, add beans

Boil until soft, usually 2-3 hours. Make sure you keep adding water. No quemes los frijoles!

Set aside beans

Heat olive oil in a frying pan.

Scoop beans into the pan with some of the liquid

Let it simmer in the oil for a about 2 minutes before smashing

Start smashing until you achieve the texture you want.

Add salt to taste.

Assembling Tostadas:

Grab your ready made tostadas. Smear a good amount of frijoles for the first layer and then a generous amount of ceviche, add slices of aguacate to finish. Grab your Tapatio for the picante your kids can’t handle. Pairs well with Coronas and chisme. Get ready because you are going to want to eat like 10 in a row.
